Rye (<i>Secale cereale</i>), once the primary bread grain of Europe, this grain, found from Turkey to Iran and the plains of Central Asia, was largely superseded by wheat. It still remains popular, though, for adding its distinctive flavour and colour to breads, crackers and other baked goods, as well as for the production of rye whisky.
